Soufflé

Preparation time: 40 minutes - cooking time: 35 minutes - serves 6 

Ingredients: 1 kg. potatoes, 150 g. cream, 50 g. but­ter, 4 eggs, 70 g. grated gruyère, nutmeg, salt, pepper.

Peel, wash and steam the potatoes. Mash and whip into a puree with 50 g. of butter. Add the salt, the 4 egg yolks and the cream and stir in well. Fold in the stiffly whisked egg whites while carefully lift­ing the mixture. Pour into a greased soufflé dish and bake in a moderate oven. The soufflé is ready for serving when the edges let go of the dish. Note: Instant potato can also be used to prepare the puree.
