Bacalhau a congregado
Preparation time: 45 minutes - cooking time: 1 ½ hours - serves 6
Ingredients: 500 g. cod, 500 g. potatoes, 30 ml. olive oil, 100 g. onions, 10 g. garlic, parsley, salt, pepper, cloves.
Soak the cod to remove the salt. Peel the potatoes and cut into round segments. Clean the onions and cut into rings. Chop the garlic and parsley finely but separately.
Arrange a layer of onion rings in a stewing‑pan, sprinkle with parsley, pepper and cloves. Then put in the potatoes and the flaked fresh cod. Pour in the olive oil which must reach the level of the cod. Cover the pan and simmer for an hour. Shake the pan from time to time so that the contents remain detached.
